Foods rich in purines must be avoided if you have gout. Purines are a type of chemical that produce uric acid in the body. They are naturally found in the body and can also be found in certain foods. The main modification in the diet traditionally involves eating a low-purine diet. Although avoiding purines completely is not possible, you should strive to limit them.

Both moderate and high-purine foods and drinks must be avoided if you have gout. These include

Why High Uric Acid Levels Cause Gout

When a cell in the body dies, the nucleus of that cell is destroyed and uric acid is formed. In plain terms, it is an excess, a product naturally metabolized by the human body. In other words, it is the source of endogenous uric acid.

Uric acid is the end product of the purine degradation process. It is a weak acid that is usually ionized into urate salt dissolved in plasma. The vast majority of uric acid exists in the form of monosodium urate. The solubility limit of urate salt is about 6.8 mg / dl at 37°C. At higher concentrations, urate crystals are precipitated. However, in some cases, urate crystals are not precipitated due to the effects of some serum soluble substances. Most uric acid in the blood is free, only < 4% associated with serum proteins. Mean blood uric acid levels in men is 5.1 ± 1.0 mg / dl , and in women is 4.0 ± 1 mg / dl .When the blood uric acid level crosses the upper limit, it is considered to have elevated uric acid. Normally, the synthesis and secretion of uric acid is in equilibrium. The total amount of uric acid in the body is about 1200 mg , and 600 mg . When uric acid forms in the body, approximately two thirds of total uric acid are synthesized and the same number excreted primarily by the kidney.

High Purine Vegetables Are Ok

Some vegetables and plant foods, such as peas, beans, lentils, spinach, mushrooms, oats, and cauliflower, are high in purines. However, several studies have shown that they do not increase the risk of gout.

In fact, the opposite seems to be true, with a vegetable-rich diet being associated with a lower risk of gout compared with the lower consumption of vegetables. Therefore, you do not need to limit or avoid any vegetables on a gout-friendly diet.

Theres More To Gout Than Too Much Uric Acid

Before we dive into the list of foods to avoid with gout, its important to get to the root of what causes too much uric acid and who is at a higher risk.

First, no one is exempt from getting gout. Some people are just more sensitive to purine-rich foods and drinks and thus churn out more uric acid. Genes can play a significant role, so if you have a relative with gout, you might be at a higher risk.

Second, putting on weight through adulthood is associated with a higher risk of gout, according to research published in 2021 in the journal Arthritis Research and Therapy.

In an earlier study published in Arthritis and Rheumatology, overweight people were 85 percent more likely to have higher uric acid levels than people at a healthy weight.

Previous studies have not differentiated between intake of conventional meat and offal, so recommendations have to be the same. Given the strong link between meat intake and gout which is based on purine content alone offal should definitely be avoided too.

Somewhat contradictory to the purine-gout theory, consumption of purine-rich vegetables is not associated with an increased risk of gout .

Researchers speculate this could be due to a lower bioavailability of purines in vegetabes, as well as other nutrients which may offset the harmful effects of their purines.

Red Meat And Organ Meat

Red meat and organ meats are high in purines. Eating these foods increases the uric acid levels in the blood and the risk of gout and gout attacks.

A 2017 study looked at gout incidence in people who followed either a Western diet or the Dietary Approaches to Stop Hypertension diet. The researcher found the DASH diet was associated with a lower risk of gout, whereas the Western diet was associated with a higher risk of gout.

To help prevent gout symptoms, its best to limit highly processed foods and beverages and foods high in refined carbohydrates, such as sweets, baked goods and pastries, chips, crackers, cookies, candies, soda, ice cream, white breads, and some pre-made frozen meals.
