If you’re in a rush, simply add the tub of soup to 8 cups boiling water. Bring soup back to a boil, then turn down and simmer for up to 30 minutes, stirring frequently. Al likes to add a couple cans of coconut milk at the 30 minute mark.

This traditional pea soup is the ultimate in French Canadian style comfort food! Look for an un-smoked ham hock in the meat department of your local supermarket. If you can’t find one, a smoked ham hock will work too. Trim off and discard skin from ham hock.

Bring 8 cups of cold water to a boil and add ham hock. Bring to boil reduce heat, cover and simmer, stirring occasionally, until meat is falling off bone 30-40 minutes.
